beyond Goa), garlic, tangy
tamarind, coconut and fiery
local chillies play their part
in the creation of Goan
favourites such as chicken
xacuti and pork vindaloo (from
the Portuguese ‘vinho d’alho’).
Hanging up your apron, it will
then be time to roadtest the
tasty results of the class. Rest
of afternoon free.

when you get home! After lunch,
the day is free.
